BISCOTTI COOKIES
History of biscotti
cookies
Historians tell us that the Romans used to eat little cakes
made from nuts and honey on special festive holidays. Sailors discovered that
if they baked their bread twice so that it was hard it would keep better on sea
voyages. Somehow the idea of twice baking sweet bread or cookies became the
beginnings of biscotti. The word “biscotti means “twice baked”.
Italians dunk their
biscotti in wine or coffee
Since it is a hard cookie biscotti is usually dipped in coffee,
milk or wine before eating. Italians eat biscotti for breakfast and as a snack
with coffee and they dip it in sweet dessert wine after a meal. Marsala
wine and vin santo are good choices for dipping biscotti.
